I’ve never had much success cooking sweet potatoes, but thought I’d try again to add some more colour to a vegetable rotation that leans green.
A light and quick meal that includes homemade soup and store-bought sushi.
As a former vegetarian, I know how hard it can be to find a good tofu recipe. I’ve tried and rejected many. Here are a few favourites that have stood the test of time for me.
I received this recipe in an email from September, 2000. I have never been able to find the original, which was called Santa Fe Wrap. It has a pretty potent combination of onion and garlic, but it makes a great lunch or light dinner.
The original recipe is quite spicy, so I adapted it to adjust the spice. Tofu chorizo pairs nicely with beans and peppers in a stir-fry, but also makes a delicious filling for tacos or burritos. Basically, you can use it anywhere you use taco meat.
