Tofu Wrap with Lime & Cilantro
Tofu is great at absorbing flavours. The bold combination here makes a delicious wrap.
Tofu Wrap with Lime and Cilantro
I received this recipe in an email from September, 2000. I have never been able to find the original, which was called Santa Fe Wrap. It has a pretty potent combination of onion and garlic, but it makes a great lunch or light dinner. Allow time for the tofu to marinate.

Ingredients
- 4 tbsp lime juice
- 1 tbsp olive oil
- 8 oz extra-firm tofu, drained, patted dry, and crumbled
- 1/4 cup red onion, diced
- 1/3 cup fresh cilantro, chopped
- 1 clove garlic, minced
- salt and pepper to taste
- 4 flour tortillas, 7" or 8"
- 2 cups lettuce, thinly sliced
- 1 cup salsa
Instructions
- Whisk 3 tablespoons (45 mL) lime juice with oil in a medium bowl. Add tofu, onion, cilantro, and garlic. Toss to combine. Add salt and pepper to taste. Stir again and let sit for 20-30 minutes to marinate.
- Meanwhile, preheat oven to 350F (175C). After tofu has marinated for about 10 minutes, wrap tortillas in foil and heat in the oven for about 8-10 minutes. You want them warm but not crispy.
- Toss lettuce with 1 tbsp (15 mL) lime juice.When tofu is done marinating, lay out each tortilla on a plate. Line about ¼ of the lettuce down the centre of the tortilla. Top with about ¼ of the tofu mixture and salsa to taste.
- Roll up each tortilla and serve with remaining salsa on the side.
