Easy Kale Salad

An easy kale salad that you can customize any way you like. I’ve started with basic ingredients that I like, but feel free to try other vegetables or dressings. The preparation time varies according to how long you marinate the kale. I specify Tuscan kale here because it isn’t as tough as regular kale and will soften just by marinating in the dressing for a short time.
Easy Kale Salad
A kale salad that is easy and very quick to prepare. This recipe is very much to taste, so be prepared to experiment with it.
Ingredients
- Tuscan kale, chopped Use as much as you need for the number of people you are serving.
- Greek feta salad dressing
- Tomatoes, chopped, whatever variety you prefer
- Roasted, unsalted pumpkin seeds
- Hummus and pita Optional
Instructions
- Place chopped kale in a bowl. Add just enough salad dressing to moisten the kale, or more to taste. See Notes, below.
- Let kale site for 5-10 minutes to soften. In the meantime, chop the tomatoes.
- Add chopped tomatoes to kale and sprinkle with pumpkin seeds. Toss and serve.
- Optional variation: Spread hummus on a plate. Add marinated kale, then tomatoes and pumpkin seeds. Serve with pita bread, naan thins, or pita chips.
Notes
- I use Greek feta dressing because it’s my favourite, but any vinaigrette would probably do. I wouldn’t advise a cream dressing here, but I haven’t tried it. If you try a cream dressing and it works, let me know in the comments.
- The hummus idea came from a delicious Mediterranean salad I had at The Wilcox Gastropub in Mississauga.
