A deep red smoothie that is quick to whip up when you have frozen ingredients on hand.

I developed this recipe as part of a school snack program to highlight red fruits and vegetables. It features strawberries and beets. As with other vegetables, the key to using beets is masking the flavour. Pomegranate juice accomplishes that goal.
Servings: 1 250-mL serving
- 7-8 strawberries, fresh (hulled) or frozen
- 2-3 medium frozen beet slices
- 1 small banana, sliced
- 1/4 cup pomegranate juice, no sugar added
- 1/8 cup water
- Put everything in your blender & blend until smooth. To make blending easier, you can thaw frozen ingredients before blending. You may need to add more water to adjust the consistency.
